WHere is a simplified version of a beverage found on a new menu. Designed as a party-sized premix which is bursting with the flavours of a holiday season, making it excellent for hosting a holiday party. Any leftover cordial you can use for morning drinks, puddings, or for additional servings of the drink.
The Bikini Cocktail
Makes enough for 10 people
Ingredients for the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Premix (produces 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
To prepare the Syrup: Combine every items in a pot, bring to a gentle boil, agitating so the sugar melts. After that, take off the stove and leave to reach room temperature completely. Decant into a sealable bottle, close it and store in the fridge, where it will keep for up to a month.
To make Premix: Mix the specified liquids into one large bottle, let it rest for 60 minutes, then pass it through , ideally through cheesecloth, to ensure it's perfectly clear.
When ready to serve: Pour 85ml of your premix to a cocktail shaker filled with ice, gently stirring gently for a minute to cool it down. Pour to a frosted cocktail glass or equivalent, decorate with a few cranberries adding the final touch using a brief mist with the mandarin essence above the glass.
